DESCRIPTION:On January 27\, Gastronomy & Beyond welcomes Chef Paco Morales 
 for a conversation that explores gastronomy as a powerful intersection of h
 istory\, territory\, culture\, and innovation.\n\nAt his restaurant Noor in
  Córdoba\, Paco Morales has built a unique culinary project rooted in rigor
 ous historical research. By studying the cuisine of Al-Andalus\, he brings 
 forgotten ingredients\, techniques\, and narratives into the present\, tran
 slating centuries of knowledge into a contemporary gastronomic language. Hi
 s work is not only about cooking\, but about preserving cultural memory\, u
 nderstanding place\, and questioning how the past can inform the future.\n\
 nIn this talk\, we will reflect on gastronomy as a tool to connect people t
 o their heritage\, to revalue local ecosystems\, and to shape new ways of t
 hinking about food systems within our cities. From the kitchen to the archi
 ve\, from the territory to the table\, Paco Morales’ work offers a compelli
